Quality control and detection of possible contamination of spices with e-nose
This application note shows that the quality of black pepper can be monitored using HERACLES e-nose. The analysis highlighted significant differences of odor profiles depending on the quality, related to the presence of oil contamination. The proportion of oil contamination was evaluated according to a quantitative model previously set up with samples of known amount of contaminant.

Assessment of the origin and purity of gelatin with an electronic nose
The FOX Electronic Nose has been used to study powder gelatins from pork and beef origins. Results indicate that the Electronic Nose as an analytical instrument can be a perfect quality control tool to quickly assess the origin and the purity of gelatin with a minimum of preparation time. These analyses show the possibility of identification of low percentages of beef or pork gelatin in a presumedly pure gelatin for certification of origins or guarantee of purity.

The Electronic Nose and Tongue: a powerful marketing and sales tools in the Japanese food and beverage industry

In Japan electronic nose and tongue instruments have been widely used as Research and Development tools particularly in the food, beverage and cosmetics industries for shelf life analysis or formulation developments. They are more and more used nowadays at the production floor as easy, reliable and fast organoleptic Quality Control instruments. They do give simple electronic signature correlated with the smell and taste qualities (quantitative or qualitative). They can also provide a chemical firewall instrument or early warning process indicators of any changes in the raw materials profiles or finished products qualities.

Electronic Nose and Tongue instruments are now included in sales and marketing tools. They are used by vendors in order to:

  • Guarantee objectively the batch to batch consistency of products to their customers by providing an electronic signature on every lot delivered
  • Outrun competitors by showing objective specifications of their products
  • Position their products versus competition

Electronic Nose and Tongue instruments can be not only part of a manufacturer's specifications under an electronic signature format within relationships with customers or suppliers, but they can also be used as powerful tools to objectivate the organoleptic the specifications of a manufacturer’s products.

This article presents examples where the Electronic Nose and Tongue are part of the marketing and sales efforts of food companies in Japan.

Sensory quality assessment of edible gelatin with an electronic tongue and an electronic nose

For gelatins used as functional ingredients in the food industry, flavor and taste quality are of utmost importance since it can impact the sensory features of final products. Functional ingredients are usually assessed by trained human sensory panels. This study proposes to investigate the use of instrumental sensory analysis to assess commercial gelatin samples and to compare the results to an expert panel evaluation.

This study showed the possibility to use electronic nose and tongue to map a sensory profile of gelatins for quality control. More generally, these analyzers can avoid time consuming panel sessions for routine analysis of functional ingredients.
